Starbucks syrup pumps: sugar and calories per pump

Short answer: one pump of a standard Starbucks syrup (classic, vanilla, caramel, hazelnut, toffee nut, peppermint) adds about 20 calories and 5 grams of sugar. Sauces run higher. The number of pumps depends on your cup size, not the drink, so a grande gets 4 pumps and a venti iced gets 6. Why the pump is the number that matters

When a customer asks you to cut the sweetness, the lever you actually pull is pumps, not sizes. Every flavored syrup and sauce at the bar is dosed in pumps, and each pump is a fixed amount, roughly a third of an ounce. That is why "half the syrup" is a real order and "less sweet" is not. If you know the per-pump number, you can do the math on any custom drink in your head. A grande vanilla latte is 4 pumps, so 4 times 20 is 80 calories and 20 grams of sugar from the syrup alone, before the milk.

The two things that change the total are which syrup and how many pumps. Standard flavored syrups are all the same. Sauces, the ones that pour thick like mocha and white chocolate mocha, carry more sugar per pump. Sugar-free syrups are the escape hatch at essentially zero.

Standard syrups sit at 20 and 5. Cinnamon dolce is the odd one at 25 and 6. The sauces are where the sugar climbs, and white chocolate mocha sauce is the heaviest pour on the bar at 60 calories and 15 grams a pump.

This is the standard build for a flavored hot or iced beverage. Iced venti gets an extra pump because the cold cup is larger.

Put the two tables together and any drink is easy to size up. A venti iced caramel macchiato at 6 pumps of vanilla is 120 calories and 30 grams of sugar from syrup. Drop it to 3 pumps and you halve that. Sugar-free syrup takes the same drink to near zero from the syrup line, though the milk and any sauce still count.
